Sparkling wine is a fizzy wine created from  significant levels of carbon dioxide. While Sparkling wine is usually used to refer to other wine variants like champagne or rose'. There are other examples of sparkling red wines like the Italian Brachetto, Bonarda and Lambrusco.

In Australia, sparkling wines are made with the same grapes and winemaking techniques that are used in the countries above. Regulations forbid Australian producers to use the word Champagne on their labels, hence why Australian labels just call themselves "Sparkling Wines".

The Sparkling quality of these wines come from the carbon dioxide content and may be the result of natural fermentation. Sparkling wine comes in many different colours and styles. The flavours are dependent on factors like the dominant grape variety, the sugar level, and whether it's vintage or non-vintage style. Tasting notes for each sparkling style include:

• Sparkling White - Citrus, peach, toast, floral and nutty notes

• Sparkling Rose' - Strawberry, pomegranate, red current, pink grape fruit flavours with nutty notes.

• Sparkling Red - Sweet plums, prunes, dark berries, cherry, chocolate and spices

• Prosecco - Citrus, apple, pear, melon and honey
