Sparkling wine is a fizzy wine created from significant levels of carbon dioxide. While Sparkling wine is usually used to refer to other wine variants like champagne or rose'. There are other examples of sparkling red wines like the Italian Brachetto, Bonarda and Lambrusco.
In Australia, sparkling wines are made with the same grapes and winemaking techniques that are used in the countries above. Regulations forbid Australian producers to use the word Champagne on their labels, hence why Australian labels just call themselves "Sparkling Wines".
