I ndividual parcels were cold soaked for 2-3 days, fermented at moderate temperatures and gently extracted for 10-14 days prior to pressing, then matured for 12 months prior to blending and bottling. French oak plays a suppor tive role to the wine’s generous ripe dark fruits.
Tasting Notes
A supple, rounded Shiraz with appealing plummy fruits, a touch of spice and generous tannin, produced from Oatley family vineyards at Mudgee. Wil prove a fine par tner to richer flavoured red meat dishes
