Our Sherry cask solera is made up of 42 casks, some from Spain and some from our mates who make the famous Australian fortified wine now known as Apera.
Tasting Notes
It is the richer and more layered of the two barrel-aged gins, with residual sherry characters underpinned by juniper or pine oil notes. We’re seeing a palate dominated by hazelnuts, dried fruits, cassia and soft hints of star anise.
